New Potato Fries From the Farmer

Baptiste’s Oven-Baked Potato Fries – Les Frites de Baptiste au Four

  • 1-1/2 pounds;750g new potatoes, scrubbed but not peeled, cut into 1/4-inch rounds
  • 3 tablespoons;45ml extra-virgin olive oil
  • Fleur de sel
  • Piment d’Espelette or Freshly ground black pepper


  • Preheat the oven to 425F (220C).
  • Bring a large pot of salted water to a boil (about 8 quarts to 1 tablespoon coarse salt). When the water is boiling, blanch the potatoes for 1 minute. While they’re blanching, lay out a double thickness of cotton tea towels on a work surface.
  • Brush a baking sheet with the equivalent of about 1 tablespoon of the olive oil.
  • Transfer the potatoes from the boiling water to the tea towels, laying them out in a single layer. They’ll dry almost instantly. Transfer them to the oiled baking sheet, then brush them evenly with the remaining oil. Sprinkle them with salt and pepper, and bake in the center of the oven until they are golden and crisp, 20 to 25 minutes.
  • Remove from the oven, transfer to a serving dish, and enjoy them!
